Resolution Follow Up

We are a month in to the new year and are you still following true on your New Year’s resolution? What was it? If it was to lose weight and eat healthier it doesn’t have to be all or nothing. Don’t fall into the “well I messed up the resolution so I guess I will try next year” attitude.

Every year I try to make mine to make myself a little healthier. I like to challenge myself to make new recipes and this year was to eat more at home. My husband and I really enjoy going out to dinner so now we decided to make it for special occasions. That means I have more dinners to make and it can be difficult to always find new meals. I love searching different websites for recipes.

I have found so many favorites on Lindsay Ann Loft. One of my favorites is the Brunch Egg Bake. I can make that for any meal. I can put so many vegetables in there, eggs for my protein, you can even use an egg substitute if you would like, maybe a a little chicken…there are so many different options. I think the leftovers are just as good.

I also love the Minestrone Soup. I make a big pot and freeze it in containers. When I am looking for a hot lunch or even a snack, I just pull it out and pop it in the microwave to defrost and eat. Everything in it is so healthy that you can have it anytime. If you are having one of those days where you need something more to eat, go for the soup. Very healthy! This is another recipe that you can put in what you want. I like the red pepper flakes and I don’t even measure the spinach in there, I just throw in handfuls!

Planning out my meals is making my resolution a little easier as well. I find some recipes that I want to try and plan that out for a specific day. I can shop for all of my recipes in advance so I am not running to the store to get the supplies. When I don’ t have everything in the house, I usually find something else to make. It makes it so much easier when I have a calendar of meals. You can do one for the week or even plan out the month.

Eating healthier and losing weight is a lifestyle change. There should never be an end to a healthier way of eating. That is how I keep my weight off. Are there struggles, you bet! Having made a choice to eat healthier, it is easier to put those days behind me and keep moving on to the next day.
