    This weekend we celebrated my husband’s birthday. 🙂 We both love garlic mashed potatoes. I decided to make us these to accompany his birthday dinner. This recipe is not only flavorful but it is simple and quick! It avoids tons of butter, sour cream, and milk without losing any flavor. Ingredients: 2 1/2 Pounds red potatoes, cleaned and diced with skins 5 – 7 Cloves garlic, smashed with end trimmed 1 Cup vegetable broth 2 Tablespoons earth balance or butter Method: Place diced potatoes and garlic in a steamer.     Yesterday we discussed the health benefits of White Foods one of them was quinoa. Here’s a recipe I like to make with quinoa. Use this as a side dish or have it for lunch. This recipe is full of protein and veggies. Quinoa Pilaf 1 Yellow onion, chopped 2 Stalks celery, chopped 2 Carrots, chopped 1 Garlic clove, minced 1 Teaspoon thyme 1 Teaspoon rosemary 1 Teaspoon sage 2 Cups quinoa, rinsed 3 Cups vegetable broth, boiling Saute onion, celery, carrots, and garlic until the onion is caramelized.
