    Fresh peaches make my summer. Anytime I can enjoy them on their own, in oatmeal, or a dish all their own, I will. This is a simple, healthy recipe you can bake to use overly ripe peaches. Make it as a light dessert or serve at a brunch with yogurt. Ingredients: 3 Overripe peaches, peeled and diced 1/2 Cup oatmeal 2 Tablespoons raw sugar (or brown sugar) 1/2 Teaspoon vanilla extract 2 Teaspoons coconut oil (or olive oil) 2 Pinches salt Method: Preheat the oven to 350 degrees.     Mediterranean Pizza

    I love healthy pizza! We make it whenever we get a chance. Like when I made a roasted vegetable pizza with my girlfriends. This is a healthy variation with feta cheese instead of loads of mozzarella. You may want to call it a flat bread. Pizza or flat bread, I think you’ll love it.     One of my favorite appetizers to get at a restaurant is bruschetta. Fresh tomatoes and basil are a great combination. This is a simple recipe to make this dish at home. 6 Plum tomatoes, chopped 4 Garlic cloves, minced 1/4 Cup fresh basil, chopped 1/4 Teaspoon salt 1/8 Teaspoon fresh ground pepper 2 Tablespoons balsamic vinegar 1/4 Cup olive oil Combine all ingredients in a bowl.     Baked Tortilla Chips

    Make your own healthy version of tortilla chips in the oven. Bake corn, white, or whole-wheat tortillas for a quick and fresh side to your next dinner. Ingredients: Tortillas – corn, white, or whole wheat Method: Preheat the oven to 350 degrees. Using a pizza cutter and slice the tortillas into equal pieces. As you would with a pizza. Place on a cookie sheet and bake for 10-15 minutes until tortillas begin to brown. Serve with salsa and guacamole.

    Healthy Vegetable Pizza

    This weekend I was joined by two of my girlfriends, Amanda and Laura. I love spending time with them they’re fun to be with and share my love of healthy food.
