Brunch Egg Bake | Recipe

This brunch egg bake is great for weekend visitors. It is simpler than quiche but your guests will never know that you quickly threw it together. It’s also very versatile, swap out ingredients and add some for whatever you have on hand. When we have company visiting for the weekend, I will make this with the oatmeal bake that I love so much. You can even assemble it the night before and pop it in the oven when you get up.


  • 5 Eggs, scrambled
  • 1/3 Cup milk
  • 1/2 Teaspoon pepper
  • Day old bread, chunked
  • 1 Tomato, diced
  • 3 Handfuls of baby spinach
  • 1/2 Cup cheddar cheese, shredded
  1. In a bowl mix together eggs, milk, and pepper.
  2. Arrange Vegetables and cheese at the bottom of a medium sized baking dish.
  3. Pour egg mixture on top of the vegetables.
  4. Bake at 350 for 45 minutes or until done.

Note: The photo above is a doubled recipe that we made for my sister’s Baby Shower. It’s also the before picture. We didn’t have an opportunity to photograph it after it came out of the oven… it was gone in no time!

How to Make Icing Cupcakes a Breeze

This is an easy way to icing your cupcakes and you will keep your hands clean! Follow the step by step instructions below for perfectly iced cupcakes.

 Use plastic wrap an place a generous dollop in the center.

Overlap the plastic to create a plastic tube.

Tighten the icing by whipping the icing in a circle.

Cut a hole in the corner of a ziplock bag and string one side of the icing plastic wrap through.

Trim the edge of the bag and the plastic tubing.

You’re good to go! Start with your icing on the outer rim of the icing.

Mommy Mocktail | Recipe

This weekend we hosted a baby shower! We wanted to have a fun drink without the alcohol. This is a perfect drink for a summer’s baby shower. It’s fruity, cool and delicious!

Mommy Mocktail – Bellini


  • Sparkling white grape juice, chilled
  • Peach strawberry juice, chilled
  • Frozen peach slices


  1. Add a slice of frozen beach to each champagne flute.
  2. Fill each glass halfway with Peach strawberry juice.
  3. Carefully add the sparkling white grape juice to each glass.
  4. Enjoy!

Making Ice Cream

This weekend we are hosting a cookout. I wanted to do something fun so I broke out my ice cream maker. To make great ice cream, I consulted the experts, Ben and Jerry. Using their cookbook Ben & Jerry’s Homemade Ice Cream & Dessert Book.

I made the Oreo Mint recipe which was incredibly simple. I’m also happy to know that I used whole ingredients like cream and milk to make my ice cream and I avoided any unnecessary additives.

I have the the ice cream maker attachment for my kitchen aid, it was very simple to use.

And after 20 minutes I had ice cream. I hope the crowd will be pleased! This could be the beginning of a very dangerous addiction. 🙂
