Spaghetti Squash

Happy New Year Everyone! It is nice to get back to the normal routine after the holidays.

I just started back to my walking after a few weeks on crutches. It seems that my knee injury was worse than I thought. I had a stress fracture in one of the bones in my knee from running. As a result, I wasn’t allowed to walk for 12 weeks. It feels so good to get back to walking.

I also have to get back to my normal way of eating. After over indulging with the holidays and after that a week on vacation, I need to get back to healthier eating.

I wanted to share a very easy meal that I made and it was one that I thought would be a little intimidating. It was so simple that I wanted to share it with you.

It is spaghetti squash. I never quite knew what to do with it. Once I baked it in the oven and that worked well but I don’t think that I cooked it long enough. Here is a simple way that I made it that takes no time at all and is so easy! It will surely be one of my favorites.

Simply start by cutting a spaghetti squash in half longwise. Scoop out the seeds and the stringy parts and throw them away. I was only making it for myself so I used half of it and covered the other half with a plastic wrap to make in a few days. I refrigerated that wrapped half.

I put the other half, cut side up in a microwave safe dish. I used a 8 x 8 dish but whatever will hold the squash and have enough space to rotate. My microwave tray spins during the heating process so I didn’t need to turn it while cooking. If you have a microwave that doesn’t spin, you will have to rotate the dish.

Once I had the squash in the microwavable dish, I put water in the bottom of the dish. About 1/2 cup but it needs to cover the bottom by about 1/2 of an inch. I covered it with a piece of waxed paper. I put it in my microwave on high for 12 minutes. Depending on the size, you may need to add or subtract a minute or 2. *If you need to rotate the dish, put it in for 4 minutes, rotate it a 1/4 of a turn, then another 4 minutes and then a 1/4 of a turn and cook for another 4 minutes. Once you take it out of the microwave, use a fork and just scrap out all of the squash. You can take it all the way down to the skin.

Put it in a bowl and serve it with pasta sauce, maybe a can of diced tomatoes, a little butter spray and parmesan cheese, whatever you wish to use. As you can see from my photo, I used a basic pasta sauce with a little parmesan cheese sprinkled on it.

That is it! Easy right? Here is some even better news! It is very healthy! It is a vegetable so you can count it as one of your vegetable servings and you can eat a good size bowl of it. One cup has around 40 calories!!! You could also put a baked or grilled chicken breast on it to add protein. The squash has no fat, 1 gram of protein and 2 grams of fiber.

I found that there was no reason to be intimidated by this vegetable. It tastes very good and I think that I like the taste better than regular pasta. The texture is a little different but it is very good.

If you are looking to add a different vegetable into your mix and were a little leery of cooking spaghetti squash, give it a try! One of my goals this year is to try something different once a week. This one is a keeper!
