Recipe | Black Bean Quesadillas

This is my husband’s favorite recipe. Sometimes we skip the oven and eat them fajita style. This recipe is delish and very simple to make.

Black Bean Quesadillas

Ingredients:

  • 1 Green pepper, chopped
  • 1 Onion, chopped
  • 2 Cloves of garlic, minced
  • 1 Can of black beans, drained and rinsed
  • 2 Tomatoes, diced
  • Red pepper flakes
  • Chili powder
  • Cumin
  • Tortillas
  • Shredded Cheddar Cheese

Sauté peppers and onions until onions are transparent then add garlic.

Add 4 good shakes of the red pepper flakes, chili powder, cumin, and any other spices you prefer, mix in black beans until heated and add tomatoes.

Place mixture on one half of a tortilla sprinkle with cheese, fold over and sprinkle cheese on top. Bake in oven for 10 minutes at 400 degrees or until cheese has browned.

Makes 8 Quesadillas
