Quinoa Pilaf

Yesterday we discussed the health benefits of White Foods one of them was quinoa. Here’s a recipe I like to make with quinoa. Use this as a side dish or have it for lunch. This recipe is full of protein and veggies.

Quinoa Pilaf

  • 1 Yellow onion, chopped
  • 2 Stalks celery, chopped
  • 2 Carrots, chopped
  • 1 Garlic clove, minced
  • 1 Teaspoon thyme
  • 1 Teaspoon rosemary
  • 1 Teaspoon sage
  • 2 Cups quinoa, rinsed
  • 3 Cups vegetable broth, boiling

Saute onion, celery, carrots, and garlic until the onion is caramelized. Add spices and quinoa. Stir for 3 minutes until the quinoa is toasted. Add boiling broth, cover, and cook for 20 minutes or until the liquid has been absorbed. Remove from heat and allow to sit for 10 minutes. Fluff with a fork and serve.
