Pancakes are perfect on a Saturday morning. Enjoy these homemade pancakes this weekend, you will never buy the mix again!
- 1 Cup milk
- 2 Tablespoons olive oil
- 3 Tablespoons maple syrup or orange juice
- 1 1/8 Cup flour
- 1 Tablespoon baking powder
- 1/4 Teaspoon salt
Combine dry ingredients in a bowl and wet ingredients in another, I use a measuring cup. Whisk wet into the dry and mix well to combine. Allow mixture to rest while the skillet heats up.
If you have an electric stove, I recommend using heat level 3. If you’re using a gas stove arrange the flame on low. Allow the skillet to heat completely. Quickly spritz with olive oil or a non stick pan.
Use a 1/2 cup measuring cup and pour batter on the skillet. When the pancake starts to bubble and the edges begin to firm, flip it. Cook the other side until done.
Top with maple syrup or fresh fruit and enjoy!
Variations: Toss in a handful of blueberries or chocolate chips to the batter.
