With the new year just underway, I was thinking of some ways to make some changes in a healthy eating plan. I lost 105 pounds by eating proteins, fruits, vegetables, and whole grains. I totally cut out sugar. Another big change that I made was that I no longer ate processed foods. I would eat what I call simple foods. Basically, they are all of the food groups above. I once heard Jillian Michaels say if it isn’t grown from the ground or if it doesn’t have a mother, you don’t eat it. When you eat these foods you know what is in them. Basically, the vitamins and nutrients that naturally are in the food. I like to use herbs and spices just to add a different flavor.
Having said that, I ate and continue to eat simple foods, but that doesn’t mean that you can’t try different recipes. Who wants to eat grilled chicken breasts and steamed vegetables all of the time? You still need variety. Marinading your food can change flavors. Again, trying different spices and herbs can make some bland food taste great. Cooking with fruits and fruit juices is good too. Using your imagination with different meals is fun to do. There are things that I have made that I will not try again and others that have become favorites. You just need to experiment.
Checking different recipe websites is another great idea. If you are like me, many of my meals in the past were made up of some sort of meat and potato or rice. Maybe pasta like mac and cheese. Once a week I might add a vegetable. Mostly because I got tired of the same thing. Now I make sure that I include a vegetable with every meal and a salad with lots of fresh vegetables. One of my new years resolutions is to try new recipes with vegetables. If you have any that you really enjoy, let me know. Here is one that I found that I am anxious to make. It seems to be very simple.
Orange Broccoli Cauliflower
- 2 bunches of broccoli
- 1 head of cauliflower
- 1 large orange
- scallions or onions cut in small pieces
Steam broccoli and cauliflower with the rind of the orange. Once soft, take out the rind and add scallions. Squeeze the juice of the orange over the vegetables. Season with a little pepper. (The recipe that I found said to add about 2 tablespoons of butter. I normally don’t add butter to my food but if you want it, I would just cut it back a little.)
