Brunch Apple Oatmeal Bake | Recipe

This weekend my sister and her boyfriend came to visit! I thought that this would be a great time to make this Apple Oatmeal Bake. We like it so much that I wanted to share it. We agreed that it could could be a dessert! Maybe with a little ice cream. 🙂 Feel free to substitute the apples for another type of fruit but since it’s fall I can’t think of anything better in oatmeal.

Apple Oatmeal Bake for Brunch

Ingredients:

  • 2 Cups rolled oats
  • 1/2 Cup chopped walnuts
  • 1/3 Cup brown sugar
  • 1 Teaspoon baking powder
  • 2 Teaspoons ground cinnamon
  • 1/4 Teaspoon salt
  • 2 Cups milk (I used rice milk)
  • 1 Large egg
  • 2 Tablespoons melted and cooled butter
  • 2 Teaspoons vanilla extract
  • 2 Ripe bananas, sliced
  • 2 Apples, chopped

Preheat the oven to 375 F. Combine dry ingredients in a bowl and whisk together, save a handful of walnuts for topping. In another bowl, combine the wet ingredients.  Place the sliced bananas in the bottom of a buttered dish, I used a 2 1/2 quart oval casserole dish. Arrange half of the chopped apple on top of the bananas. Next, add the oats mixture and drizzle the wet mixture evenly over the oat mixture and fruit. Top with remaining fruit and walnuts. Sprinkle a little cinnamon and a little more brown sugar, if you desire. Bake for 40-45 minutes.
