Yesterday I discussed 5 ways to use brown bananas and today I’m excited to share my blender waffle recipe because I love it.
- 2 Cups rolled oats
- 1 Banana
- 1 Teaspoon vanilla extract (I like more)
- 1 1/2 Cup water
- 1 Tablespoon sugar or agave nectar
- 1/2 Teaspoon salt
- 1 Tablespoon of flour, optional
Heat waffle iron to medium high. Toss all ingredients into the blender and blend until smooth. Check the consistency and if your mixture looks too liquidy, add a tablespoon or two of flour or whole wheat flour to thicken it up a bit.
Give your iron a quick spritz with a nonstick spray or brush with olive oil. Pour 1/3 of the mixture into the iron and cook as directed by your waffle iron.
Makes 3 large waffles or 4 medium waffles
Top with fresh fruit or maple syrup.
Variation: Add a bit of cocoa powder and top with strawberries and ice cream for a dessert
